Healthy Summer Eating

Healthy eating makes everybody feel better, but often we are at a loss for new ideas that are cheap and cheerful and move you along the way to your five a day.
- The best veggie sandwich stuffer: This replaces tuna or egg mayo and is a delicious dairy free alternative. Take a block of extra firm tofu and smash it up with a fork, chop very very finely 2 stalks of celery and 1/4 of a red onion. In a dry frying pan toast 3 tablespoons of sesame seeds until they turn golden brown. In another bowl mix 2 tablespoons of light tahini with 1 tablespoon of low fat yoghurt and 1 tablespoon of low fat mayonnaise. Mix everything together and season with salt and pepper to taste.
- The healthy dip. Grate or finely chop half of a cucumber, place in a colander to drain. Grate a carrot. Mix the two together in a bowl and add enough low fat greek style yoghurt to create a very veggie dip consistency. Take a small handful of fresh mint and finely chop it, mix it in and season with salt and pepper. You can substitute basil for mint and de-seeded tomatoes for the carrot to get a whole different taste.
- Hummus alternative. Sick of chickpeas? why not try a white bean dip? Take a tin of any small white bean, drain and rinse and put into the bowl of a food processor. Add a large handful of fresh coriander leaves, the juice of half of a lime and 2 tablespoons of olive oil. Blend until it is a smooth and green. I often call this the poor person’s guacamole. Use as a dip or sandwich stuffer.
